A throwback to you Scouting Days.  This  chicken can be made at home, or out camping.  You can also do this on a grill or a smoker.

Chicken and vegetables with savory buttermilk biscuit topping.

Smokey and tangy.  Tastes great on grilled wings.  This is easily kept and reheated.

Smokey and Savory beef contrasted by sweet corn and avocado salsa.

Meaty and Rich, and not too salty!!!  Make this anytime of year!


This takes at least three weeks, but it is well worth the wait. This uses TCM or tinted curing mix, (sodium nitrate) which keeps meat pink while cooking.  It's not vital, but it will just be cured beef and not corned. 


Brining the chicken helps keep the chicken moist and juicy, while the coating crunchy.  Try tossing the finished chicken in honeyed hot sauce!

A great healthy snack with the addition of fresh crunchy peas and crispy bacon.  Serve with greens over earthy bread.  A great way to use up colored eggs.

Crispy Florida rock shrimp over creamy stoned ground grits.  Topped with tomato bacon jam, and earthy greens.

Tender, juicy smoky pork butt with a salty tangerine and rosemary sauce.  If you don't have a chamber smoker, this can be grilled over very low heat with the lid down.

Seared scallops with tomato and fennel stew and clover honey.

Fresh kale and whole wheat pasta with a spicy buttery sauce and blistered tomatoes.  Perfect for a healthy meal. 

Served over egg noodles.  Would be perfect with fresh truffles, or other varieties mushrooms included.

Great for a party appetizer or with pasta.  Try substituting out cheeses.  Easily frozen after baking for a quick weeknight meal.

Sweet Florida Lobster Tail, Creamy Risotto, Earthy Herbed Butter

Roast chicken with a melange of fresh seasonal vegetables that will drag your family to the table.

A creation of spring flavors that can be eaten as an entree, or for a side dish.  Fresh peas by far are the best choice.

One of my family's favorites.  Add whatever vegetables you enjoy.  

Try it with homemade ricotta cheese!

This would also taste great with chicken, beef, pork, or other game meats!
